Grant Description

Purpose and goal:

The Mineral Shift has developed several promising product concepts, one of which is already being used and validated commercially with good results. These, including communication concepts, have been tested within public meals and also on private consumers. Pilot trials, tests and analyses of the process technology have paved the way for planning and scaling up.

A successful full-scale test has been carried out and barley bulgur is available for sale to public meals. Business models and information materials for various products and target groups have been developed. Expected results and effects:

The project has sparked interest and spread knowledge about challenges with a shift to more plant-based diets, as well as for the solution offered by the project. Increased general interest in locally and sustainably produced food, in crises preparedness and self-sufficiency, in full nutrition from plant-based foods, in wholegrains and older and locally adapted varieties, as well as in economic return and livelihoods for farmers’ producing sustainably, are all inherent added values that contribute to the opportunities to reach the expected effects and results of the Mineral Shift.

Approach and implementation:

The project has been run by committed actors who complement each other well. In good cooperation with Warbro Kvarn, Chalmers and Axfoundation, Hidden in Grains has been able to further develop and calibrate its hydrothermal process as well as plan for and test scale-up. Axfoundation has made crucial contributions to product development, business support and communication.

MatLust Development Node and Södertälje municipality´s test bed have been important in reaching relevant target groups in the public sector and developing and testing products for which there is demand.
