Grant Description

Whole grain intake has important health benefits and increased intake should be highly recommended. However, the whole grain-rich products on the market often face great challenges connected to taste and texture.

In this project we will utilize novel processing techniques to address the growing size of the aging population and develop a sustainable nutritious cereal-based product appealing for the taste buds of senior citizen.

The process design for this product has been optimized for its nutritional content and for minimizing side-stream content, to utilize the most of our valuable food.

The aim of the project is to highlight the needs of the older adults and to be a driver in the development of future nutritious and appetizing food for seniors.

The project is a collaboration between Lund University, University of Copenhagen, Lantmännen AB, and the consulting partner Mårtensen Consulting AB.

The team will develop one or several product prototypes, further unfold their potential through flavour and texture optimization into a nutrient-rich climate-smart product, and the result will be evaluated by an expert sensory panel, as well as by older adults in Sweden and Denmark. Age should not determine how palatable your plate is!
