Purpose and goal:
Build knowledge and use new technology to produce dry fractionated protein concentrates with a high protein content and low antinutrient content, in a resource-efficient and sustainable way, using Swedish peas and fava beans. Build knowledge about extrusion of the protein concentrate in order to produce texturized raw
materials to the food industry on a large scale, which is required to produce so-called meat analogues with the right texture. Expected results and effects:
Satisfy the market´s great demand for Swedish-grown and Swedish-processed protein concentrates and textured products based on peas and field beans. With this project, we fill a large part of the gap between primary production and the food industry and increase Sweden´s self-sufficiency in these products.
Approach and implementation: Literature search on antinutrients in peas and field beans. Optimization of the dry fractionation to increase the protein content and minimize the antinutrient content. Trial productions to be able to choose the right equipment, supplier and process conditions. Sensory evaluation and application tests of concentrates and extrudates in different food matrices.
Analysis of antinutrients, solubility, water and fat holding capacity, emulsifying capacity, gelling etc. Develop customized, plant-based meat analogues based on the protein products produced.
