Purpose and goal:

The aim of the project was to contribute to the development of a sustainable and nutritious alternative to a 3D-printed salmon fillet, based on mycoprotein. Mycorena therefore needed to develop a mycoprotein ingredient that was well suited to the intended process technology. Through a series of different optimization steps, a mycoprotein should be developed to be suitable for 3D-printing with regard to flow properties, something that is important in order not to clog the nozzle of the printer and interrupt the process. The product would then be used in a test launch of the salmon fillet.

Expected results and effects:

In summary, the project was completed successfully, and the overall goals were achieved with good results. Among other things, the project has resulted in a mycoprotein that is compatible with a 3D-printing process and the development of a realistic 3D-printed alternative to a salmon fillet product regarding appearance, texture and taste. The product has been on sale physically in Austria and online in Europe and received good reviews from consumers.

The hope is a continued collaboration to scale up and be able to offer a sustainable and nutritious alternative to salmon. Approach and implementation:

The successful project execution is assumed to be due to good planning. Thanks to planning and risk analysis, high-risk activities had been planned early in the project. Even though several unexpected events such as equipment delayed etc. occurred, there was still time to carry out the planned activities within the framework of the project.

An important factor in the successful collaboration was good communication with regular meetings and physical meetings to coordinate the work. Continuous reporting, documentation, and discussion of results from both parties also contributed.
