Purpose and goal:
Together with a leading food retailer and a pioneer in plant-based alternatives, we will refine fiber residues from beverage production. Through advanced fermentation, the remains are converted into high-quality ingredients, while bitter substances and other unwanted substances are eliminated. The goal is to optimize the use of resources, promote circular flows and contribute to a more sustainable and diversified food market.
The project addresses the need to reduce waste and utilize underutilized resources, which is crucial for future food production. Expected results and effects:
Overall, the project is expected to result in an optimized fermentation process for the specific fiber residue, a carefully evaluated and functionally appropriate ingredient for plant-based food products, and evaluation of the ingredient´s potential in a larger food chain and market potential for finished end products based on the ingredient, all while contributing to sustainability and innovation in the food sector.
