The very limited use of captured herring and sprat for food production stays in strong conflict to the current geopolitical situation and the ongoing dietary protein shift.
Among incentives for a systems change is that these fish species recently were ranked as the most favorable animal protein sources common to the EU when combining climate impact and nutrient density data. RE-BLUE aims at exploring new scalable food value chains based on Baltic and North Sea herring/sprat.
Process-steps which can tackle small-sized fish, presence of enzyme-dense organs, high levels of pigments/pro-oxidants/small bones and occasional abundance of dioxins, PCB´s and PFAS will be designed and combined. An innovative trimming/filleting line tailored for herring/sprat
