In this project, the Nusa Indonesian Gastronomy Foundation is collaborating with American chefs living in Indonesia, Indonesian chefs living in the United States, as well as national and local organizations across the archipelago, to investigate, preserve, and promote indigenous culinary traditions to an international audience.
